Asparagus and Ham Parcels
Boil a pan of water and leave to bubble, then trim the ends of the asparagus, wash it and place into the water to simmer for a couple of minutes before draining. Next, slice the ham and roll a strip around each tip of asparagus. For the finishing touch, stir up the mayonnaise, lemon zest and a little pepper in a bowl, and serve your dip with the asparagus.
Goats Cheese and Vegetable Crostini
For the topping, you’ll need about 200g of shelled broad beans, peas, or other green vegetables if preferred. Put them together with a clove of garlic and add around 30ml of olive oil, plus seasoning. Then blend until the mixture looks smooth and chill it in the fridge.
To prepare the crostini, take some small slices of Ciabatta bread, grill them and dress with a little olive oil while they are still warm. You can also rub with garlic for added flavour. Spread the paste (you might have to add some water to get a better spreading texture) and add some goat’s cheese on top.
